today i'll post the red velvet cupcake recipe taken from joyofbaking i tried them and i was succeeded. anyway, i'm excited since tomorrow will be my birthday *party* hihihi

red velvet cupcake recipe:
125gr flour
1/4tsp baking powder
1/4tsp salt
1tbsp cocoa powder
57gr unsalted butter
150gr granulated sugar
1 egg
1/2tsp vanilla extract
120ml milk
1tbsp red food coloring
optional:
1/2tsp vinegar
1/2tsp baking soda
cream cheese frosting:
227gr cream cheese
1/2tsp vanilla extract
60gr confectioners' sugar
160ml whipping cream
step:
mix flour, cocoa powder, baking powder, salt in bowl 1 with spoon/whisk
mix food coloring and milk in a glass with spoon
beat the unsalted butter with mixer till creamy and smooth on medium speed in bowl 2
add granulated sugar to bowl 2, beat again w/ mixer till light and fluffy about 2 min on medium speed
add egg and vanilla extract to bowl 2, beat that in
add 1/2 of the dry mixture to bowl 2, beat that in
add 3/4 of the milk mixture to bowl 2, beat that in
add 1/4 of the dry mixture again to bowl 2, beat that in
add the rest of the milk mixture to bowl 2, beat that in
add the rest of the dry mixture to bowl 2, beat that in
mix vinegar and baking soda on bowl 3 quickly, then pour the mixture to bowl 2, beat that in w/ spatula
last, pour the mixture of bowl 2 to the muffin cups, and put them in the oven
(note; i prefer using standard temperature oven to avoid anything bad)
to make sure that the cake is fully baked, use toothpick!
while your cupcakes are in the oven, make the cream cheese frosting;
beat the cream cheese with mixer till creamy and smooth in medium speed
add vanilla extract and icing sugar to the mixture, beat that in till they're mixed completely w/ spatula
beat the whip cream gradually by pouring it slowly while the mixer is mixing
mix the mixture with mixer in high speed till smooth and creamy
and tadaa! your cream cheese frosting is done!
frost your cupcakes creatively!
